Ingredients

  • 2 eggs
  • 2 cups sugar
  • 2 1/2 cups crushed pineapple with juice
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1/2 cup crushed nuts
  • 1/2 stick melted oleo
  • 8 ounces pineapple flavored cream cheese

Instructions

  1. Preheat oven and prepare the sheet pan as needed.
  2. In a mixing bowl, melt the oleo (butter or margarine).
  3. Add the crushed pineapple with juice to the melted oleo and stir.
  4. In a separate bowl, combine the eggs, sugar, flour, soda, and vanilla until well mixed.
  5. Pour the pineapple mixture into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared sheet pan and bake until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the cream cheese topping by combining the softened cream cheese, powdered sugar, vanilla, and crushed nuts.
  8. Once the cake has cooled slightly, spread the cream cheese mixture over the top.
