Ingredients

  • 20 oz. can pineapple
  • 1 cup sugar
  • 4 Tbsp. cornstarch
  • 1 cup margarine
  • 1 cup brown sugar
  • 1 1/4 cups oatmeal
  • 1 1/2 cups whole wheat or white flour
  • 1 tsp. baking soda

Instructions

  1. Cook the pineapple, sugar, and cornstarch together until thickened.
  2. Allow the mixture to cool.
  3. Mix the remaining ingredients and press into a greased 9 x 13-inch pan, filling up to 1/2 inch on the sides.
  4. Save a small amount of the mixture for the topping.
  5. Pour the cooled pineapple mixture over the crust.
  6. Bake at 375°F (190°C) for 20 minutes.
