Ingredients

  • 1 1/2 cups packed brown sugar
  • 1/2 cup shortening
  • 2 eggs
  • 4 cups flour
  • 2 teaspoons soda
  • 3/4 teaspoon salt
  • 1 (6 oz.) can frozen orange juice concentrate, thawed
  • 1 (15 1/4 oz.) can crushed pineapple, undrained
  • 1 cup chopped nuts

Instructions

  1. Cream together the brown sugar and shortening.
  2. Add eggs and beat well.
  3. Combine flour, soda, and salt.
  4. Add alternately with the thawed orange juice concentrate, beating after each addition.
  5. Stir in the crushed pineapple and chopped nuts.
  6. Pour the batter into two greased loaf pans.
  7. Bake at 350°F for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
