Ingredients

  • 1 cup sugar
  • 1/4 cup shortening
  • 1 1/2 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1 teaspoon cinnamon
  • 2 cups pinto beans, cooked and mashed
  • 2 cups diced raw apples
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla

Instructions

  1. Cream sugar, shortening, and egg together until smooth.
  2. Sift together flour, soda, salt, cloves, allspice, and cinnamon; gradually add to creamed mixture.
  3. Stir in cooked and mashed pinto beans, diced raw apples, raisins, chopped walnuts, and vanilla.
  4. Pour batter into a greased and floured 9 x 13-inch pan.
  5. Bake in a 350°F oven for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
