Ingredients

  • pastry for 2-crust 8-inch pie, unbaked
  • 2 cups cooked rice
  • 2 cups medium cream sauce
  • 2 medium onions, thinly sliced
  • 2 tablespoons butter
  • 1 can (1 lb.) salmon
  • 2 hard-cooked eggs
  • 1/2 cup grated Cheddar cheese

Instructions

  1. Roll out half the pastry 1/8-inch thick to line an 8-inch square pan.
  2. Mix cooked rice with 1/2 cup of cream sauce.
  3. Place half of the rice mixture in the pastry-lined pan.
  4. Add pieces of canned salmon over the rice.
  5. Distribute sautéed onions and chopped hard-cooked eggs over the salmon.
  6. Cover with the remaining rice mixture.
  7. Roll out the second half of the pastry and place it over the rice filling.
  8. Moisten the edges of the top crust to allow steam escape.
  9. Bake in a preheated moderate oven at 350°F for 1 hour.
