A vibrant and aromatic basil and garlic sauce with tomato paste and Romano cheese, perfect for enhancing soups or serving as a flavorful condiment for Mediterranean dishes.

Ingredients

  • 4 cloves garlic
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons parsley, chopped
  • 3 tablespoons tomato paste
  • 1/2 cup grated Romano cheese
  • 1/3 cup olive oil

Instructions

  1. In a mortar, pound the garlic to a paste with the basil and parsley; add the tomato paste and Romano cheese.
  2. Beat in the olive oil by droplets, then beat in 1 cup of hot soup.
  3. Pour the sauce into a small bowl and pass it around with Garden Soup.
