Ingredients

  • 4 c. yellow squash
  • 4 slices torn bread
  • 1/2 c. milk
  • 1/2 c. Parmesan cheese
  • 2 eggs, beaten
  • 1 stick margarine
  • paprika

Instructions

  1. Cook the yellow squash in slightly salted boiling water until tender. Drain and mash.
  2. Mix torn bread, milk, Parmesan cheese, and beaten eggs well in a bowl.
  3. Stir the mashed squash into the bread mixture.
  4. Dot the bottom of a casserole dish with 1/2 stick of margarine.
  5. Pour the squash mixture into the casserole dish.
  6. Dot the top with the remaining margarine.
  7. Sprinkle with paprika.
  8. Bake at 375°F for 35 to 40 minutes until golden and bubbly.
