Ingredients

  • 1 c. yellow cornmeal
  • 1/2 c. all-purpose flour
  • 1 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1 c. milk
  • 1 egg
  • 2 1/2 Tbsp. corn oil

Instructions

  1. Heat oiled 10-inch iron skillet.
  2. Sift together the cornmeal, flour, salt, and baking powder.
  3. Add milk and unbeaten egg; mix well.
  4. Heat oil in the skillet and add it.
  5. Pour the batter into the hot skillet.
  6. Bake at 450° for 30 minutes.
