Ingredients

  • 3 large potatoes, peeled and cubed
  • 1 tube refrigerated pizza crust
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1 pound diced bacon
  • 1 large onion, chopped
  • 1/2 cup chopped sweet red pepper
  • 1 1/2 cups shredded Cheddar cheese
  • 1 1/2 cups shredded Mozzarella cheese
  • sour cream (optional)

Instructions

  1. Place potatoes in a saucepan and cover with water. Bring to a boil; cook for 20 to 25 minutes or until very tender.
  2. Preheat oven according to pizza crust package instructions.
  3. Roll out the refrigerated pizza crust on a baking sheet or pizza stone.
  4. Drain cooked potatoes and mash with milk and salt until smooth.
  5. Spread the mashed potatoes evenly over the pizza crust.
  6. In a skillet, cook diced bacon until crispy; drain excess fat.
  7. Add chopped onion and cook until translucent.
  8. Spread cooked bacon and onion mixture over the mashed potatoes.
  9. Sprinkle chopped red pepper, shredded Cheddar, and Mozzarella cheeses on top.
  10. Bake in the preheated oven until cheese is bubbly and crust is golden, about 15-20 minutes.
  11. Optional: serve with dollops of sour cream.
