Ingredients

  • 6 chicken breasts
  • 1 small chopped onion
  • 1/2 cup flour
  • 2 cups chicken broth
  • 2 crushed garlic cloves
  • 3 cups steamed rice
  • 12 corn tortillas
  • 2 tablespoons chili powder
  • 2 cups shredded low-fat cheese

Instructions

  1. Preheat oven to 350°F.
  2. Stew chicken, remove bones, and set aside. Skim fat from chicken broth.
  3. Use broth to make chili by adding chili powder and simmering with flour and garlic until thickened, about 10 minutes.
  4. Place corn tortillas in boiling water for 5 to 10 seconds to soften.
  5. Layer softened tortillas, shredded chicken, steamed rice, chopped onion, and cheese in a baking dish.
  6. Pour chili over the layered ingredients and garnish with additional cheese.
  7. Bake in the preheated oven for 20 minutes.
