Ingredients

  • 12 oz. jar apricot preserves
  • 2 Tbsp. soy sauce
  • 1/4 tsp. garlic powder
  • 1 yellow pepper, cubed
  • 1 medium pineapple, pared and cut into 1-inch chunks
  • 1/2 c. red wine vinegar
  • 1 tsp. ginger
  • 1 green pepper, cubed
  • 2 tomatoes, cut into wedges

Instructions

  1. In a skillet, combine apricot preserves, red wine vinegar, soy sauce, ginger, garlic powder, and 3/4 teaspoon salt.
  2. Add yellow pepper, green pepper, and onions. Cover and cook, stirring occasionally, until vegetables are tender but crisp.
  3. Add tomatoes and pineapple chunks. Heat through.
  4. Serve immediately.
