Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika
  • 8 pieces of fryer chicken (legs and thighs preferred)
  • 1/3 cup shortening or vegetable oil
  • 1 1/2 teaspoons baking powder
  • 4 eggs
  • 1 1/2 cups milk
  • 3 tablespoons melted butter
  • 1 teaspoon to 1 tablespoon celery seed

Instructions

  1. Combine 1/4 cup flour, 1 teaspoon salt, pepper, and paprika; mix well.
  2. Roll chicken pieces in the flour mixture and brown on all sides in shortening or vegetable oil.
  3. Remove the chicken from the skillet and drain on paper towels.
  4. Prepare the popover batter by mixing 1 1/2 cups milk, 4 slightly beaten eggs, 3 tablespoons melted butter, 1 1/2 teaspoons baking powder, and 1 to 1 tablespoon celery seed.
  5. Pour the batter into a greased baking dish or pie pan.
  6. Arrange the browned chicken pieces on top of the batter.
  7. Bake in a preheated oven at 375°F (190°C) for approximately 40 minutes until the popover is risen and golden brown.
