Ingredients

  • 1/2 cup oil
  • 1/2 cup flour
  • 1/2 bell pepper
  • 1 large onion, chopped
  • 1 small stalk celery, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Kitchen Bouquet
  • 1 small bay leaf
  • 1 tablespoon salt
  • 1/2 can Ro-Tel tomatoes
  • 2 fresh tomatoes
  • 24 ounces frozen shrimp
  • 1 can crabmeat

Instructions

  1. Make a roux by heating oil and stirring in flour until dark brown.
  2. Add chopped onion, bell pepper, celery, and minced garlic to the roux and cook until vegetables wilt.
  3. Add 2 quarts of water, Ro-Tel tomatoes, and fresh tomatoes to the pot.
  4. Stir in seasonings including Kitchen Bouquet, bay leaf, and salt, then simmer for about 1 hour.
  5. Add frozen shrimp and crabmeat, then continue simmering for 20 minutes until seafood is cooked through.
