Ingredients

  • 1/4 cup margarine
  • 1/3 cup sugar
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 1 1/3 cups sifted cake flour
  • Vegetable cooking spray
  • 1/2 cup powdered sugar
  • 1 tablespoon unsweetened cocoa
  • 2 tablespoons water

Instructions

  1. Cream margarine in a small bowl.
  2. Add 1/2 cup sugar, beating at medium speed with a mixer until light and fluffy.
  3. Add egg white and vanilla; beat well.
  4. Gradually add flour to the mixture, stirring until blended; the dough will be stiff.
  5. Wrap dough in heavy plastic wrap and freeze for 10 minutes.
  6. Shape dough into 1-inch balls and place 2 inches apart on a cookie sheet.
  7. Press your thumb into the center of each cookie to make an indentation.
  8. Bake at 375°F (190°C) for 10 minutes.
  9. Remove from oven and cool.
  10. Combine powdered sugar, cocoa, and water; stir well to make icing.
  11. Spoon 1/4 teaspoon of icing into each cookie center.
