Ingredients

  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • 1/4 cup celery, diced
  • 1 stick butter
  • 12 oz. frozen shredded potatoes, thawed
  • 1 quart seasoned dry bread cubes
  • 1 small can golden whole kernel corn
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 eggs, slightly beaten

Instructions

  1. Cook onion, green pepper, and celery in butter over low heat until the onion is tender.
  2. Add thawed shredded potatoes and broth. Simmer for 5 minutes.
  3. Pour the mixture over bread cubes and corn.
  4. Add salt, pepper, and eggs.
  5. Stir gently to blend all ingredients.
  6. Stuff the mixture into a turkey.
