Ingredients

  • 1 lb. pork loin, cut into strips
  • 1 medium cooking apple, diced
  • 1 medium green pepper, cut into thin strips
  • 2 scallions, sliced
  • 2 Tbsp. margarine or butter
  • 1 cup water
  • 1/2 cup apple juice
  • 2 Tbsp. soy sauce
  • 1 Tbsp. vinegar
  • 3 Tbsp. brown sugar
  • 1/2 tsp. salt
  • 1 1/2 cups original Minute Rice

Instructions

  1. Cook and stir pork, apple, pepper, and scallions in hot margarine in a large skillet until browned.
  2. Add sugar, salt, water, apple juice, soy sauce, and vinegar; bring to a boil.
  3. Reduce heat; cover and simmer for 10 minutes.
  4. Stir in rice; cover. Remove from heat; let stand 5 minutes.
