Pork Chop-Stuffing Bake

Ingredients

  • 6 pork rib chops, 3/4-inch thick
  • 3 Tbsp. butter or oleo
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 3 cups herb-seasoned stuffing mix
  • 1 egg, slightly beaten
  • 17 oz. can cream-style corn
  • 10 oz. package frozen mixed vegetables

Instructions

  1. Trim fat from pork chops.
  2. In a skillet, cook pork trimmings until about 1 tablespoon of fat is rendered.
  3. Brown the pork chops in hot fat, seasoning with salt and pepper.
  4. Remove the chops from the skillet.
  5. Add butter to the drippings in the skillet.
  6. Add chopped celery and onion; cook until tender.
  7. Remove the skillet from heat and add the herb-seasoned stuffing mix, tossing to coat.
  8. Combine the egg with the cream-style corn; blend with the stuffing mixture.
  9. Spoon the stuffing mixture into a 12 x 7½ x 2-inch baking dish.
  10. Cook frozen mixed vegetables in boiling salted water for 5 minutes; drain.
  11. Sprinkle the cooked vegetables over the stuffing mixture.
  12. Top with the browned pork chops.
  13. Bake uncovered in a preheated 350°F oven for 55 minutes.
  14. Sprinkle the cooked chops with paprika before serving.
