Pork Chop-Stuffing Bake

- Trim fat from pork chops.
- In a skillet, cook pork trimmings until about 1 tablespoon of fat is rendered.
- Brown the pork chops in hot fat, seasoning with salt and pepper.
- Remove the chops from the skillet.
- Add butter to the drippings in the skillet.
- Add chopped celery and onion; cook until tender.
- Remove the skillet from heat and add the herb-seasoned stuffing mix, tossing to coat.
- Combine the egg with the cream-style corn; blend with the stuffing mixture.
- Spoon the stuffing mixture into a 12 x 7½ x 2-inch baking dish.
- Cook frozen mixed vegetables in boiling salted water for 5 minutes; drain.
- Sprinkle the cooked vegetables over the stuffing mixture.
- Top with the browned pork chops.
- Bake uncovered in a preheated 350°F oven for 55 minutes.
- Sprinkle the cooked chops with paprika before serving.
