Ingredients

  • 6 lean pork loin chops (1/2-inch thick)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • vegetable cooking spray
  • 1/2 tsp. crushed savory
  • 1 bay leaf
  • 2 1/2 cups tomato juice
  • 1/2 cup water
  • 1 cabbage, cut into 6 wedges
  • 6 carrots, sliced into 1-inch pieces
  • 1 1/2 cups chopped onion

Instructions

  1. Season pork chops with salt and pepper.
  2. Coat a Dutch oven with vegetable cooking spray and place over medium heat until hot.
  3. Add pork chops and brown on both sides.
  4. Add crushed savory, bay leaf, tomato juice, and water to the Dutch oven.
  5. Bring to a boil, then reduce heat to simmer.
  6. Cover and cook for 30 minutes.
  7. Add chopped onion, cabbage wedges, and sliced carrots.
  8. Return to a boil, then reduce heat to simmer.
  9. Cover and cook for an additional 35 minutes or until vegetables are tender.
  10. Remove bay leaf before serving.
