Pork Egg Rolls

Ingredients
- 3 Tbsp. soy sauce ⓘ
- 2 Tbsp. sherry ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. sugar ⓘ
- 1/4 tsp. pepper
- 1 lb. boneless pork, cut in 1 x 1 1/4-inch pieces or ground pork ⓘ
- 3 c. finely chopped cabbage ⓘ
- 1 (8 1/2 oz.) can bamboo shoots, drained and chopped ⓘ
- 1 (4 1/2 oz.) can mushroom bits and pieces, drained ⓘ
- 6 medium green onions, sliced
- 1/4 tsp. salt ⓘ
- 1 Tbsp. cornstarch ⓘ
- 1 lb. egg roll wrappers ⓘ
Instructions
- Mix soy sauce, sherry, 1 teaspoon of salt, sugar, and pepper. Pour over pork.
- Marinate, stirring occasionally, for 5 minutes.
- Drain well and reserve the marinade.
- Combine the marinated pork with chopped cabbage, bamboo shoots, mushroom bits, sliced green onions, 1/4 teaspoon salt, and cornstarch.
- Wrap the mixture in egg roll wrappers, sealing the edges.
- Deep fry the egg rolls in hot oil until golden brown and crispy.
