Ingredients

  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 16 oz. can pork and beans, drained
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup raisins
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a large bowl, mix sugar, vegetable oil, eggs, and drained pork and beans, beating until smooth.
  3. In a separate bowl, combine all-purpose flour, cinnamon, baking powder, and baking soda.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Fold in raisins and vanilla extract.
  6. Pour the batter into a greased loaf pan.
  7. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from the pan and slicing.
