Ingredients

  • 1 cup chopped chourico
  • 1 large chopped sweet pepper
  • 1 small chopped onion
  • 1 tablespoon minced parsley (optional)
  • 3 or 4 eggs
  • salt and pepper (optional)

Instructions

  1. Mix chopped chourico, sweet pepper, onion, and minced parsley (if using) in a bowl.
  2. Beat the eggs well and add to the mixture.
  3. Heat 1 tablespoon of oil in a skillet over medium heat.
  4. Pour the mixture into the skillet and cook until set and lightly browned on the bottom.
  5. Flip or fold the omelet as desired and cook until cooked through.
