Ingredients

  • 1 to 2 onions, chopped
  • 1 Tbsp. cooking oil
  • 2 lb. pork shoulder, cubed
  • 1 can hominy
  • 1 can tomatoes and jalapenos
  • 1 tsp. salt
  • 1 clove garlic, minced
  • 1 Tbsp. chili powder

Instructions

  1. In a large saucepan, sauté chopped onions in cooking oil until translucent.
  2. Add cubed pork shoulder and brown on all sides.
  3. Add canned hominy, tomatoes with jalapenos, minced garlic, chili powder, and salt to the pot.
  4. Simmer, covered, until the pork is tender, about 4 hours.
  5. Serve hot in bowls as soup, accompanied by crackers or warmed flour tortillas.
