Ingredients

  • 1 lb. onions
  • 1 Tbsp. oil
  • 3 1/2 lb. chuck roast
  • 1 2/3 c. beef stock
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Slice the onions.
  2. Heat the oil in a large pot over medium heat; brown the chuck roast on all sides, about 15 minutes.
  3. Add the sliced onions, beef stock, salt, and pepper to the pot.
  4. Cover and cook over low heat for about 2 hours.
  5. Remove the meat to a platter and keep warm.
  6. Skim the fat from the liquid.
  7. Bring the liquid to a boil and cook until reduced to 3 cups.
  8. Slice the meat and serve it with the reduced broth as a sauce.
