Ingredients

  • 2 lb ground beef
  • 2 cans red kidney beans
  • 1 large can whole tomatoes
  • 2 medium onions
  • 2 cloves garlic
  • 1 large green pepper
  • 1 large red pepper
  • 1 small can tomato paste
  • 1 small can tomato sauce
  • 6 ribs celery
  • 1 Tbsp parsley
  • 1 Tbsp chili powder
  • 1 Tbsp salt
  • 1 Tbsp pepper
  • 1 Tbsp oil
  • 1 Tbsp mustard
  • 3 small chili peppers

Instructions

  1. Brown the ground beef in a large skillet, then drain and transfer to a large pot.
  2. Add the kidney beans, whole tomatoes, tomato paste, tomato sauce, chopped onions, chopped celery, crushed garlic, chopped green and red peppers, parsley, chili powder, salt, pepper, and oil to the pot.
  3. In a separate large pan, add oil and lightly brown all the chopped vegetables, then add them to the pot.
  4. Stir well to combine all ingredients.
  5. Ensure the fluid level covers the top of the chili; stir occasionally while simmering on low heat for about 45-60 minutes.
  6. Serve hot with shredded Cheddar cheese on top.
  7. Optionally, serve with 2 Hershey Kisses per person after dinner for fun.
