Ingredients

  • 8 slices bacon
  • 1 cup chopped onion
  • 2 cups cubed potatoes
  • 1 cup water
  • 1 can (10 3/4 oz.) condensed cream of chicken soup
  • butter or margarine
  • 1 teaspoon pepper
  • 8 oz. (1 cup) dairy sour cream
  • 1 3/4 cups milk
  • 1/2 teaspoon salt
  • 2 teaspoons chopped parsley

Instructions

  1. Cook bacon until crisp, then crumble and set aside.
  2. Saute chopped onion in butter until translucent.
  3. Combine all ingredients in a large pan, except sour cream.
  4. Add crumbled bacon to the mixture and cook until heated through.
  5. Do not drain the potatoes after cooking.
  6. Stir in sour cream and heat the chowder for 5 to 10 minutes, but do not boil.
  7. Serve hot with crackers.
