Ingredients

  • 2 lb. potatoes
  • 1 lb. cooked bacon
  • 1/2 c. shredded Cheddar cheese
  • 5 eggs
  • 1 c. milk
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 5 green onions

Instructions

  1. Boil potatoes in their skins until tender.
  2. Cut the potatoes into 1/2-inch slices.
  3. In a buttered 9 x 13-inch baking dish, cover the bottom with a layer of potato slices.
  4. Cover the potatoes with a layer of crumbled cooked bacon.
  5. Sprinkle sliced green onions over the bacon.
  6. Sprinkle shredded Cheddar cheese on top.
  7. Combine eggs, milk, salt, and pepper, then pour the mixture over the layered ingredients.
  8. Bake at 375°F (190°C) for 40 minutes until set and golden.
