Ingredients

  • 2 1/2 cups raw potatoes, coarsely grated
  • 1 cup carrots, coarsely grated
  • 1/2 cup onion, coarsely grated
  • 1/2 cup milk
  • 1 cup cream of chicken or cream of celery soup
  • 1 teaspoon salt
  • pepper to taste
  • 1 tablespoon melted oleo
  • 1/2 cup grated cheese

Instructions

  1. Mix together grated potatoes, carrots, and onion, then put into a greased baking pan.
  2. Blend milk with cream of chicken or celery soup, salt, pepper, and melted oleo until well combined.
  3. Pour the milk mixture over the potato mixture in the pan.
  4. Cover the pan and bake at 375°F (190°C) for 1 hour.
  5. Remove from oven and sprinkle with 1/2 cup grated cheese on top.
  6. Bake uncovered for an additional 15 minutes or until the cheese is melted and bubbly.
