Ingredients

  • 4 medium potatoes
  • 2 medium onions
  • 1 3/4 cups cooking water
  • 1 2/3 cups evaporated milk
  • dash of salt
  • 3 medium carrots
  • 3 cups boiling water
  • dash of cayenne

Instructions

  1. Dice potatoes, carrots, and onions.
  2. Cook in boiling water with a dash of salt until tender, about 15 minutes.
  3. Drain the vegetables and save the cooking water.
  4. Rice or mash the vegetables thoroughly.
  5. Ensure there is 1 3/4 cups of cooking water; if not, add fresh water.
  6. Combine the cooking water with evaporated milk; scald and slowly stir in the mashed vegetables.
  7. Add cayenne and celery salt; reheat and serve.
