Ingredients

  • 9 medium potatoes
  • 1/2 cup butter
  • 1/2 cup milk
  • 3 eggs
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp chopped parsley
  • 2 tsp salt
  • 1/8 tsp pepper
  • Mozzarella cheese

Instructions

  1. Boil potatoes, then cool slightly and mash.
  2. With a mixer, beat in butter and eggs until well combined.
  3. Stir in Parmesan cheese, chopped parsley, salt, and pepper.
