Ingredients

  • 3/4 cup chopped green pepper
  • 1/3 cup chopped onion
  • 2 3/4 cups vegetable broth
  • 1 1/2 cups finely chopped potato
  • 1/4 teaspoon pepper
  • 1/4 cup cornstarch
  • 2 1/4 cups skim milk
  • 2 1/4 cups frozen whole kernel corn

Instructions

  1. Cook green pepper and onion in a saucepan coated with vegetable spray over medium heat, stirring constantly for 5 minutes or until tender.
  2. Stir in vegetable broth, chopped potato, and pepper.
  3. Bring to a boil; reduce heat and simmer for 5 to 7 minutes or until potatoes are tender.
  4. Combine cornstarch and skim milk, stirring until smooth.
  5. Gradually add the cornstarch mixture to the potato mixture, stirring constantly.
  6. Stir in the frozen whole kernel corn.
  7. Bring the chowder to a boil over medium heat, stirring constantly.
  8. Serve immediately.
