Creamy, cheesy potato bake with a crunchy cornflake topping, perfect for family dinners or potlucks, combining rich flavors and comforting textures.

Ingredients

  • 2 lb. frozen hash brown potatoes, thawed
  • 1 pt. sour cream
  • 2 c. grated Cheddar cheese
  • 1 can cream of chicken soup (undiluted)
  • 1/4 c. margarine or butter
  • 1/2 c. chopped onions (optional)
  • 1/2 c. crushed corn flakes

Instructions

  1. Thaw the potatoes and melt the margarine or butter into the undiluted cream of chicken soup, then add the chopped onions and half of the grated cheese.
  2. Stir the thawed potatoes into this mixture and transfer to a large baking dish.
  3. Bake in a 350°F oven for 45 minutes.
  4. Remove from the oven, sprinkle the remaining cheese on top, and bake for an additional 15 minutes.
  5. Combine crushed corn flakes with a little melted butter and spread over the top of the casserole before serving.
