Ingredients

  • 6 boned chicken breasts
  • seasoned salt
  • pepper
  • 1 (6 oz.) package long grain and wild rice
  • 1/4 cup grated orange peel
  • 2 eggs, separated
  • 3 (8 oz.) cans refrigerated crescent dinner rolls
  • 2 (10 oz.) jars red currant jelly
  • 1 tablespoon prepared mustard
  • 3 tablespoons Port wine
  • 1/4 cup lemon juice
  • spiced whole crab apples

Instructions

  1. About 2 1/2 to 3 hours before serving, remove skin from chicken breasts.
  2. Sprinkle each chicken breast with 1/4 teaspoon seasoned salt and a dash of seasoned pepper.
  3. Refrigerate the seasoned chicken breasts.
  4. Cook rice according to package instructions for drier rice, adding orange peel.
  5. Allow rice to cool.
  6. Beat 2 egg whites until soft peaks form.
  7. Fold the beaten egg whites into the cooled rice mixture.
  8. Unwrap 1 can of refrigerated crescent dinner rolls.
  9. On a floured surface, lightly knead half of the dough into a ball and roll into a 10-inch circle.
  10. Repeat the process to make 6 circles. Preheat oven to 375°F (190°C).
  11. Remove chicken breasts from refrigerator. Place each, flesh side down, in the center of each dough circle.
  12. Spoon about 1/2 cup of the rice mixture onto each chicken breast half and fold the dough over the stuffed breast.
  13. Moisten the edges of the dough with water and press to seal.
  14. Place seam side down on a large cookie sheet.
  15. Slightly beat the egg yolks with 1 tablespoon of water and brush over the dough.
  16. Bake uncovered for 45 to 50 minutes or until a cake tester easily inserts into the breast.
  17. If the dough browns too quickly, loosely cover with foil during baking.
