Ingredients

  • 4 stems celery, diced
  • 1 medium onion, diced
  • 1/2 cup butter
  • 8 cups soft bread cubes
  • 2 cups mashed potatoes
  • 2 eggs, beaten
  • 1 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup parsley

Instructions

  1. Saute celery and onions in butter until tender.
  2. Mix the sautéed vegetables with mashed potatoes, bread cubes, beaten eggs, milk, salt, pepper, and parsley until well combined.
  3. Shape the mixture into balls using an ice cream scoop.
  4. Place the balls into a buttered casserole dish.
  5. Pour additional melted butter over each ball if desired.
  6. Bake at 375°F (190°C) for 30 to 35 minutes until golden and heated through.
