Ingredients

  • 1/4 cup butter
  • 1 clove garlic, minced
  • 1 3/4 cups chicken broth
  • 1/4 cup whipping cream
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 1/2 teaspoon thyme
  • 3 cups peeled, finely shredded thin skinned potatoes
  • salt to taste

Instructions

  1. Melt butter in a 2 or 3-quart pan over medium heat.
  2. Add chopped onion, minced garlic, and thyme.
  3. Cook, stirring often, until onion is soft.
  4. Add chicken broth; bring to a boil over high heat.
  5. Uncover and boil until mixture is reduced to 1 1/2 cups.
  6. Add shredded potatoes and cook over medium heat uncovered, stirring often, until potatoes are tender, about 25 minutes.
  7. Remove from heat and mix in whipping cream and grated Parmesan cheese.
  8. Season to taste with salt.
  9. Pour into a 10-inch rimmed baking pan.
  10. Bake uncovered at 325°F for 2 to 2 1/2 hours until light golden, stirring occasionally.
