Ingredients

  • 4 Tbsp. chopped onion
  • 3 Tbsp. melted butter
  • 1 cup milk
  • 2 Tbsp. flour
  • salt and pepper to taste
  • 2 eggs, separated
  • 3 cups leftover mashed potatoes

Instructions

  1. Brown chopped onion in melted butter.
  2. Add flour to the onion mixture and cook briefly.
  3. Gradually add milk, stirring constantly to make a sauce.
  4. Mix egg yolks into the sauce and combine with mashed potatoes.
  5. Fold in beaten egg whites gently into the potato mixture.
  6. Pour the mixture into a greased baking dish.
  7. Bake in a preheated oven at 350°F (175°C) for about 25 to 30 minutes until puffed and golden.
