Creamy, cheesy potatoes with green onions and seasoned bread crumbs, perfect as a comforting side dish for family dinners or potlucks, offering rich flavors and satisfying texture.

Ingredients

  • 6 large potatoes, cooked
  • 1/4 cup melted butter or margarine
  • salt to taste
  • pepper to taste
  • 1 can cream of chicken soup
  • 1 large carton sour cream
  • 1 cup grated cheese
  • 3 green onions, chopped with tops
  • 1 package dry Hidden Valley dressing
  • seasoned bread crumbs

Instructions

  1. Peel and dice the cooked potatoes.
  2. In a large bowl, add the diced potatoes, melted butter, salt, pepper, cream of chicken soup, sour cream, grated cheese, chopped green onions, and dry Hidden Valley dressing. Mix well.
  3. Transfer the mixture to a baking dish.
  4. Bake uncovered at 350°F (175°C) for 15 minutes until the cheese melts.
  5. Sprinkle with 1/2 cup more cheese and seasoned bread crumbs or crushed cornflakes on top.
  6. Return to the oven and bake for an additional 20 minutes at 350°F (175°C).
