Ingredients

  • 6 medium all-purpose potatoes (2 lb.)
  • 1 tsp. salt
  • 6 slices bacon, diced
  • 1 c. finely chopped onion
  • 1/4 c. chopped parsley
  • 8 eggs
  • 1/4 tsp. black pepper
  • 1/4 tsp. paprika

Instructions

  1. Peel and rinse the potatoes.
  2. Place the potatoes in a 3-quart pot.
  3. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Drain the potatoes and let cool.
  6. Once cooled, cut the potatoes into 1/8-inch slices.
