Potatoes O'Brien features crispy, seasoned diced potatoes with green pepper, onion, and parsley, offering a savory, colorful side perfect for breakfast or brunch gatherings.

Ingredients

  • 3 Tbsp. oil
  • 4 medium potatoes
  • 1/4 green pepper
  • 1 onion
  • 1/2 tsp. Tabasco sauce
  • 1 stalk celery
  • 2 Tbsp. chopped parsley
  • 3 Tbsp. milk
  • 2 tsp. salt

Instructions

  1. Heat oil in a skillet.
  2. Combine and toss potatoes, celery, green pepper, parsley, and onion.
  3. Add milk, salt, and Tabasco sauce and mix well.
  4. Put the mixture in the skillet and press in firmly.
  5. Cover and cook on LOW heat until done and crust has formed on bottom and sides of potatoes (about 30 minutes).
  6. Invert onto a plate and cut into wedges to serve.
