Ingredients

  • 2/3 cup sugar
  • 1/2 cup softened margarine
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1 cup vanilla nonfat yogurt
  • 1 teaspoon almond extract
  • 2 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Cream sugar and margarine until light and fluffy.
  2. Add egg whites, beating 4 minutes or until well blended.
  3. Add vanilla and almond extracts. Beat at low speed until well blended.
  4. Set aside.
  5. Combine flour, baking soda, and salt. Add alternately with vanilla yogurt to the creamed mixture, beginning and ending with flour.
  6. Pour into a greased and floured loaf pan.
  7. Bake at 350°F (175°C) for 65 minutes.
