Spinach Ranch Roll-Ups

Ingredients

  • 8 oz. cream cheese
  • 8 oz. sour cream
  • 1/4 cup mayonnaise
  • 1 package Ranch-style dressing mix
  • 1 bunch green onions
  • 10 oz. frozen chopped spinach
  • 1 can sliced water chestnuts
  • 2 to 4 tablespoons chopped canned jalapeno peppers

Instructions

  1. In a food processor, mix cream cheese, sour cream, mayonnaise, and the ranch dressing mix until thoroughly combined and creamy.
  2. Transfer the mixture to a medium-sized bowl.
  3. Add chopped green onions, cooled and squeezed dry chopped spinach, drained and chopped water chestnuts, and chopped jalapeno peppers to the mixture.
  4. Mix well to combine all ingredients.
  5. Spread enough mixture on a tortilla to cover it.
  6. Roll up the tortilla in foil and refrigerate for at least 4 hours.
  7. Remove the foil and slice the roll-up into about 1/2-inch thick slices.
  8. Serve on a small platter. These can also be frozen and thawed before serving.
