- Butter and sprinkle with bread crumbs a 9 x 13-inch baking dish.
- Peel and core apples, cut into quarters, and make several lengthwise incisions into the back of each quarter.
- Sprinkle the sugar on top of the apples and set aside.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in lemon extract.
- In a separate bowl, whisk together flour and baking powder.
- Gradually add the dry ingredients to the creamed mixture, alternating with milk, beginning and ending with flour.
- Pour the batter into the prepared baking dish.
- Arrange the prepared apples on top of the batter.
- Bake at 350°F (175°C) for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before serving.
