Ingredients

  • 3 beaten eggs
  • 1 cup milk
  • 3/4 pound Jack cheese, cut up
  • 1 cup whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup melted butter
  • 3 to 4 cloves chopped garlic
  • 2 bunches fresh spinach

Instructions

  1. Mix all ingredients in order.
  2. Pour the mixture into a flat baking dish about 10 x 15 inches.
  3. Bake for 35 minutes at 325°F or until slightly browned.
  4. Cut immediately into squares.
  5. Serve as a main dish or hors d'oeuvres.
  6. You may substitute other green vegetables such as broccoli, Swiss chard, beet tops, zucchini, or summer squash.
