Ingredients

  • 1 can tomatoes
  • 1 tsp. sugar
  • 1 clove garlic
  • 3 to 4 Tbsp. oil
  • parsley
  • basil
  • salt
  • pepper
  • fresh zucchini, sliced
  • fresh yellow squash, sliced
  • green pepper, cauliflower or broccoli, sliced

Instructions

  1. Brown the garlic in the oil.
  2. Add the canned or fresh tomatoes to the pan.
  3. Add parsley, basil, salt, pepper, and sugar; then add the sliced vegetables.
  4. Cook until the vegetables are just tender, avoiding overcooking.
  5. Serve the sauce over cooked spaghetti and sprinkle with Parmesan cheese.
  6. Enjoy with garlic bread for a complete meal.
