Ingredients

  • 2 loaves bread
  • 1 lb. boned shoulder of pork
  • 1 turkey liver
  • 1 cup diced celery
  • 1 medium onion
  • 2 Tbsp. butter
  • 2 eggs

Instructions

  1. Trim the bread and let it dry out completely.
  2. Soak the bread in water and press out the excess moisture thoroughly.
  3. Chill the bread overnight in a cloth bag with a heavy weight on top to press out any remaining water.
  4. Put the pork through a food chopper using a medium blade and cook over low heat until pink color shows.
  5. Put the turkey liver through the chopper and cook with the pork until lightly browned.
  6. In a small skillet, cook the celery and onion in butter until the onion is transparent.
  7. Crumble the dried bread into a large mixing bowl and add the cooked pork and liver with drippings.
  8. Add the cooked celery, onion, and eggs to the mixture.
  9. Mix everything well.
  10. Season with salt, pepper, and monosodium glutamate.
  11. Use to stuff a 12-pound dressed turkey or as desired.
