Ingredients

  • 3 cups leftover cubed cooked roast beef
  • 1 cup diced carrots
  • 1 cup diced peeled potatoes
  • 1 cup corn
  • 1 cup cut green beans
  • 1/2 cup chopped onion
  • 1 quart tomato juice
  • 1/2 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon dried or fresh parsley

Instructions

  1. In a large saucepan, combine all ingredients.
  2. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes or until vegetables are tender.
  4. If necessary, add 1/2 to 1 cup water to thin the soup.
