Ingredients

  • 2 1/2 cups flour
  • 1 3/4 cups chopped prunes
  • 1/2 cup boiling water
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1 cup orange juice
  • 2 large eggs

Instructions

  1. Grease and flour two loaf pans.
  2. Process chopped prunes in boiling water in a blender or processor for 10 seconds.
  3. Add sugar and eggs to the prune mixture, then process for 1 minute.
  4. Add oil and process for another minute.
  5. Add orange juice and flour, then beat well until combined.
  6. Pour batter into prepared loaf pans.
  7. Bake for 1 hour until golden brown.
  8. Cool before removing from pans.
