Ingredients

  • 2 cups water
  • 1 cup snipped pitted dried prunes
  • 1 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. In a small saucepan, combine water and snipped prunes; bring to a boil.
  2. Cover and simmer for 3 minutes.
  3. Drain, reserving 1/3 cup of the liquid. Set aside.
  4. Cream together sugar and shortening until fluffy; beat in the egg.
  5. Combine buttermilk and reserved prune liquid.
  6. Stir together all-purpose flour, whole-wheat flour, baking soda, salt, and baking powder.
  7. Add to the creamed mixture alternating with the buttermilk mixture.
  8. Fold in the cooked prunes.
  9. Pour the batter into two greased 7 1/2 x 3 1/2 x 2-inch loaf pans.
  10. Bake at 350°F for about 1 hour.
  11. Cool for 10 minutes in the pans, then remove to wire racks.
