Ingredients

  • 1 1/2 cups cooked prunes
  • 1 cup butter
  • 1 1/2 cups sugar
  • 4 eggs, separated
  • 1 cup milk
  • 3 cups sifted flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1/2 teaspoon soda
  • 2 teaspoons vanilla

Instructions

  1. Measure prunes whole, remove pits, and slice them finely.
  2. Cream butter and 1 1/2 cups sugar together until light and fluffy.
  3. Add egg yolks one at a time, beating well after each addition.
  4. Alternate adding milk and sifted flour mixed with salt, baking powder, and soda, beating well after each addition.
  5. Add the sliced prunes and vanilla extract, mixing until well blended.
  6. In a separate bowl, beat egg whites until stiff peaks form.
  7. Gently fold the beaten egg whites into the batter.
  8. Pour the batter into a prepared cake pan and bake at 350°F (175°C) for about 45 minutes, or until a toothpick inserted in the center comes out clean.
