Ingredients

  • 1 lb. cooked crabmeat, finely chopped
  • 1/4 cup minced celery
  • 1/4 cup minced onion
  • 1/4 cup minced carrot
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon white pepper
  • 1 teaspoon salt
  • 2 eggs, separated

Instructions

  1. Combine crabmeat with minced celery, onion, carrot, 1/2 teaspoon pepper, and 1/4 teaspoon paprika.
  2. Shape the mixture into small balls.
  3. Cover and refrigerate the crab balls until ready to cook or serve.
