Puffy Pineapple Pancake

- Cut the pineapple crosswise into 1/4-inch thick slices; set aside 5 slices for the pancake.
- Reserve the remaining pineapple for another use.
- Preheat a skillet or griddle and spray with vegetable cooking spray.
- In a small bowl, melt the margarine and set aside.
- In a mixing bowl, whisk together the flour, dark brown sugar, baking powder, cinnamon, and salt.
- In another bowl, combine the skim milk, vanilla extract, egg yolks, and melted margarine.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the batter until incorporated.
- Pour batter onto the prepared skillet, forming pancakes. Place pineapple slices on top of each pancake.
- Cook until bubbles form on the surface and edges are set, about 2-3 minutes.
- Flip and cook for another 2-3 minutes until golden and cooked through.
- Serve warm, optionally with syrup or additional toppings.
