Puffy Pineapple Pancake

Ingredients

  • 1 small ripe pineapple, peeled and cored
  • vegetable cooking spray
  • 1 Tbsp. margarine, melted
  • 1/2 c. plus 1 Tbsp. all-purpose flour
  • 2 Tbsp. dark brown sugar
  • 3/4 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 3/4 c. skim milk
  • 1/2 tsp. vanilla extract
  • 2 eggs
  • 1 egg white

Instructions

  1. Cut the pineapple crosswise into 1/4-inch thick slices; set aside 5 slices for the pancake.
  2. Reserve the remaining pineapple for another use.
  3. Preheat a skillet or griddle and spray with vegetable cooking spray.
  4. In a small bowl, melt the margarine and set aside.
  5. In a mixing bowl, whisk together the flour, dark brown sugar, baking powder, cinnamon, and salt.
  6. In another bowl, combine the skim milk, vanilla extract, egg yolks, and melted margarine.
  7. Add the wet ingredients to the dry ingredients and mix until just combined.
  8. In a separate bowl, beat the egg whites until stiff peaks form.
  9. Gently fold the egg whites into the batter until incorporated.
  10. Pour batter onto the prepared skillet, forming pancakes. Place pineapple slices on top of each pancake.
  11. Cook until bubbles form on the surface and edges are set, about 2-3 minutes.
  12. Flip and cook for another 2-3 minutes until golden and cooked through.
  13. Serve warm, optionally with syrup or additional toppings.
